Saving Thanksgiving

Just read the last Plaindealer on line.  You were very resourceful in saving your Thanksgiving dinner celebration for your large family.
Our son-in-law cooked our turkey at 475 degrees for 2 hrs. and it was perfect. I had my doubts at first but he had done a test run a few months ago to verify that Safeway's suggestion worked. Will mail you a print-out later but here is the recipe my husband typed.

TURKEY TROT (Dick Court)

 

Thaw frozen turkey in refrigerator for three days. Clean oven before cooking at high heat. Preheat oven to 475 degrees. Remove & discard truss that holds turkey legs together. Remove giblets & neck from cavity & save for gravy. Pull or trim off & discard lumps of fat in neck & body cavity. Rinse turkey inside & out with cool water. Pat dry with paper towels. Place adjustable V-shaped rack in roasting pan. Rub turkey all over with:

olive oil

Sprinkle with:

salt & pepper

fresh rosemary, sage & oregano

Set bird on rack with breast-side up.

Pull wings away from body, then firmly twist them to push wing tips under the bird. Using aluminum foil, form caps over the tips of each drumstick to prevent burning. If any parts of the turkey extend beyond pan rim, tuck a foil strip underneath so that drippings flow back into the pan. Do not add stuffing or close body cavity. Pour into pan:

1/2 bottle beer

Set pan on lowest rack. Roast according to this chart until thermometer stuck into turkey reaches 160 degrees:

Turkey weight:      Cooking time:

10-13 lbs.               50 min. to 1 1/4 hrs.

13-19 lbs.               1 1/4  hrs. to 2 hrs.

19-22 lbs.               1 1/2 hrs. to 2 1/2 hrs.

Halfway through roasting time rotate pan in oven to insure even cooking. If areas on breast get darker than desired, lay a piece of foil over that dark area.  Let turkey rest 30-60 min. The internal temp. should then reach 165 degrees. Lift & carefully tilt turkey to drain juices from cavity back into roasting pan. Transfer bird to cutting board. Cut off legs at thigh joints. If joints are pink, return legs to oven in another pan for 3-5 min. at 475 degrees.
